Researchers at the Korea Institute of Science and Technology (KIST) have succeeded in cultivating bokchoy with lots of glucosinolate, an anti-obesity substance, in their smart farm, the state-run institute said Friday.
The research team, led by Dr. Yoo Gi-hye from Smart Farm Research Center, produced the bokchoy by changing various cultivating environments such as cultivating fluids and lightings.
The researchers also found the right condition for the vegetable's mass production by creating a condition that can increase 2.4 times more glucosinolate content and maximize productivity by about twice, KIST said.
Bokchoy is a popular vegetable used in various foods worldwide. It has high glucosinolate content, which suppresses fat accumulation within the fat tissue and liver and works as an inflammation suppressant.
However, just eating bokchoy is not enough to suppress metabolic diseases. Although smart farms are not a new story anymore, people could not use the technology due to the high installation and maintenance cost.
The latest research will serve as a stepping-stone for industrializing smart harms that can produce highly functional food materials that prevent diseases, it said
“We will conduct clinical trials on natives in Canada, who lack in vegetable consumption and have twice more metabolic diseases than average,” Dr. Yoo said. “We expect to develop a whole new functional food product through the development of bokchoy to escape from metabolic diseases.”
The research paper was published in the latest issue of the journal Food Chemistry.
