Vic Christopher, owner of Clark House Hospitality in Troy, is repositioning his businesses for an emphasis on takeout/delivery and, once dine-in customers return next month, the model will be different. Christopher foresees diners ordering their meals in advance online and picking up food when they arrive. This will remove the traditional beginning part of a table-service meal, when diners are greeted by a host, seated, receive menus from a server, mull options, order from the server, etc.
Christopher believes polished, upscale service is incompatible with restrictions that seem sure to be in place when dining in resumes next month, including masked servers. He said, “It seems stupid to me to try to do full-serve. It’s dumb. … It’s creepy. Nobody wants to be served by a guy in mask and gloves. They don’t want it. It seems silly to me to even attempt it.”
We asked readers of the Table Hopping blog, "How will masked waitstaff for table service affect your restaurant choices?" More than 750 responded.
- 42%: I have no problem with masked servers.
- 29%: I won't return to table-service dining until it's safe for servers to no longer wear masks.
- 16%: I will dine less often in table-service restaurants.
- 13%: I won't like it but I'll put up with it and return to table-service dining as often as before.
